Lemon Blueberry Lavender Muffins

I think most of us enjoy the snack life! But finding recipe ideas for healthier snacks not packed full of processed sugars and preservatives can sometimes be tricky! Well do not fear my lovelies, for all you sweet tooths out there we have the amazing Shuang from @shuangys_kitchensink on this weeks edition of her recipe of the week to show us how we can make these delicious, healthy muffins!



Wet Ingredients

  • 1 ripe banana

  • 1 medium baked sweet potato 

  • 2 eggs (or for vegan substitute for flax eggs)

  • 1/4 cup coconut oil 

  • 2 tbsp nut milk

  • 1 tsp vanilla extract

  • 1/3 cup tahini 

  • 1/2 lemon juiced


Dry Ingredients

  • 1 cup almond flour

  • 2 tbsp arrowroot flour (optional, you can just add more almond flour)

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tbsp. lavender

  • 1/2 cup frozen blueberries 



  • 3 scoops collagen protein (great for skin nail gut health)



1. Mix together all the wet ingredients in a bowl until well combined


2. Next add the dry ingredients to the wet ingredients and mix well 


3. Fold in the frozen blueberries and lavender until combined


4. Pour the mixture evenly into muffin cases/muffin tray


5. Sprinkle some more lavender on top (optional)


6. Bake for 27 min at 350F/180C


Serves 12 muffins
