Broccoli Pesto Pasta

Now we all know pasta is a household favourite at dinner time! It's budget friendly, super easy to make and filling! Pretty much everything we want out of a meal! However many of the pre-made pasta sauces available in our local super markets are filled with lots of nasties, processed sugars, salt and additives. Although there are ones on the market better than some, most of the time the healthiest option is making your own!

 

This can also be done without breaking the bank and most homemade pasta sauces can be frozen if you prepare them in bulk making them just as convenient as bought jars! So on this weeks edition of her recipe of the week we have the beautiful Caitlin from @goodnessavenue a 3rd year nutritional and dietetic medicine student to show us how to make a healthy, tasty pasta sauce that's guaranteed to be a household favourtie!

 

Ingredients

 

Broccoli pesto sauce: 

 

  • 1 cup steamed broccoli

  • 1/4 cup raw almonds

  • 2 tbsp nutritional yeast (optional)

  • 1 bunch parsley or coriander

  • 1/4 cup water

  • juice of half a lemon

  • salt and pepper to taste

 

Method

 

Blend in a high speed blender until smooth and creamy. Stir through cooked wholemeal pasta over low heat until warmed, take off heat and add in rocket leaves and fresh tomatoes or any of your favourite add ins! Sprinkle with cracked pepper to taste. 

 

Serves approx 4
