Apple Cinnamon Pancakes

Isn't there something so heart warming and cosy about starting the weekend morning off in bed with a stack of warm, delicious pancakes!


Although a lot of sweet breakfast options can be filled with processed sugars and other nasties there are plenty of healthier alternatives out there and these Apple Cinnamon pancakes are a great way to start! We have the wonderful Sasha from @earthlingsasha on this weeks edition of her recipe of the week with these super easy breakfast pancakes and do you know what the best part is?! There's only 9 ingredients needed!





  • 1/2 cup oats

  • 1/4 cup applesauce or mashed banana

  • 1/3 cup + 1 tbsp water/plant milk

  • 1 tsp flax meal

  • 1/2 tsp baking powder

  • 1/2 tsp apple cider vinegar

  • 1 medium red apple I used Royal Gala

  • 2 tsp cinnamon

  • 1/2 tbsp coconut sugar

Caramelised Apples
  • 3 tsp cinnamon

  • 1/2 tbsp coconut sugar

  • 1 medium red apple



  1. In a blender, combine all the ingredients except for the red apples. Once combined and blended well, let sit for 5-10 minutes to thicken

  2. In the meantime, core and slice one apple across in disk shapes while cube the other apple.

  3. Heat a non stick pan and when hot, place 1 tbsp of batter onto pan, place an apple disk into the batter and press down, then add a remaining 1/2 tbsp of batter to cover. Cover pan with lid and flip when edges are golden and bubbles form.

  4. In another pan, add the cubed apples and the cinnamon + coconut sugar. Add a splash of water and let cook until soft.

  5. Cook the remaining pancake batter, stack, top with apples, and enjoy!
